Is my knife a genuine Sabatier?
First of all it must be pointed out that no SABATIER company owns "THE" Sabatier brand. The SABATIER brand is ancient and appeared at a time well before the first French legislation concerning intellectual property rights. For historical reasons several companies registered the SABATIER brand in France. This is true of the SABATIER DIAMANT company, that makes its knives in the heart of the French cutlery region.
Back at the beginning, when the brand name SABATIER was registered in France, it had to be accompanied by a word or traditional image, and our company registered the name SABATIER accompanied by a diamond. Outside France the situation concerning the SABATIER brand is far less complicated, but that is by no means a guarantee of quality.
As things stand, a large number of knives bear the name "SABATIER", it is even possible to find knives marked "SABATIER" which are made in China, and this is the case notably in the United States.
The only way for you to be sure of buying a genuine top quality SABATIER knife is to steer clear of those produced in the Far East and, out of the various other SABATIER ranges, to chose the word or image that corresponds the best to the quality level you want.
If the brand name "SABATIER" marked on the blade of your knife is accompanied by a diamond, you will be sure that your knife was indeed manufactured in France, according to traditional methods and respecting the quality criteria that make the SABATIER a "gold standard" knife.

Is there any difference between carbon steel knives and stainless steel knives? What about SABATIER DIAMANT knives?
Because of its excellent corrosion resistance qualities, the kind of
steel
most often used in the field of kitchen cutlery is the one known as "stainless steel". However, it was indeed "carbon steel" that was originally used by the cutlers. Why was there this change?
It must be remembered that the so-called "carbon" steel, contains a high level of carbon (C), just as its name indicates. In concrete terms, the high carbon content improves the cutting performance and makes the blade easier to sharpen. On the other hand, this type of steel does not resist corrosion anywhere near as well because it contains no chromium (Cr), nor molybdenum (Mo) nor nickel (Ni), in other words, the main elements that prevent corrosion.
Knives made of so-called "carbon" steel rust very easily – indeed they can even go rusty in just a few hours. When this happens patches of corrosion can be seen on the surface of the blade. Under these conditions it is essential to avoid all prolonged contact of the knife blade with water. It also means that the blade must be oiled regularly. So "carbon" steel knives should never be cleaned with water and above all, never in a dishwasher.
All these constraints encouraged the cutlers to opt for the so-called "stainless" steel. In France and Germany cutlery manufacturers often use X50CrMoV15 / 1 ;4116 (European standard 10088-2, which has no simple equivalence in the United States). This type of steel provides a good compromise between the knife's cutting performance and corrosion resistance.
